8 Canteloupes and 8 sticks of butter
I was looking at the WW Weight Tracker and that is what it says I have lost. 12 Pounds doesn’t seem like much when you have 100 or so to lose, but it is amazing how much I can already tell. My mom said she could tell something was different last time she saw me but couldn’t put her finger on it until my dad told her the weight loss was really showing in my face. I never thought I would be so happy to see the cleft in my chin again.
I am trying to stay on plan as much as possible, but I still enjoy what I eat. It is amazing what WW teaches you.
Hello 200’s, goodbye 210’s
I weighed in last night at 209, that is a total loss of 12 pounds, after a gain last week I was glad to see a loss of 3.2 pounds. I didn’t stay on plan or even track that great this week, but I was still very careful.
My mom told me that my sister is going to have weight loss surgery (gastric bypass I believe). While I am worried about her, I am hopeful for her success. I like that we are both taking control of our lives and our weights so we can be healthy for our families.
Chicken Enchilada Recipe – Modified
My sister got this recipe from a friend and my mom makes it when we come visit. I love the recipe, but made some modifications to it so it would be point friendly.
The points for one Enchilada is 5, I know that sounds like alot, but one enchilada is very filling.
Here is the recipe:
| Ingredients |
10 La Tortilla Factory 99% Fat Free Burrito Size Flour Tortillas
2 cans Campbell’s Healthy Request Cream of Chicken Soup
1/2 cup Chi-Chi’s Salsa
1 1/2 cup Kraft 2% Milk Natural Cheese Finely Shredded Mild Cheddar
3 Chicken Breasts
1/2 cup 1% Low Fat Milk
Salt
Pepper
2 tsp Olive Oil
2 Celery Stalks Chopped
1 cup Sliced Mushrooms
1 cup onion or green onion
8 oz Light Sour Cream
| Instructions |
Cook chicken in frying pan over medium heat in olive oil and salsa, covered until done. Remove chicken from liquid and add onion, mushroom, and celery to pan to saute. Cut chicken into bite size pieces and add to large mixing bowl. To chicken add one can of soup, 8 oz. sour cream, sauted vegetables, 1/4 cup of cheese, and salt and pepper to taste. In another mixing bowl combine one can of soup, 1 cup cheddar cheese and milk. Load chicken mixture evenly into ten tortillas, roll and place in baking dish, cover with milk, soup, cheese mixture and bake in a preheated over at 350 for 45 minutes

One enchilada is very filling if served with mexican rice and black beans as a side
I’ve been MIA
Work has been way busy and so has life in general. I do have good news though, yesterdays weigh in showed a 4.4# drop. for a total of 9.6# lost to date. Not bad, 9.6 in five weeks.
I will try to post an update tomorrow.
I lost a sack of potatoes…
No seriously, I lost 5.2 pounds total, which is the equivalent of a sack of potatoes. My weight loss for this week was 1.4 pounds. Yay Me!
I really was worried about this week after being sick on Thursday and Friday and not doing well on plan on Saturday and Sunday. I guess I did better than I thought.
I still have not found the motivation to start exercising yet. Maybe this weekend I will find it.
